Westville is one of my favorite casual restaurants in Manhattan. When I’m not chowing down on pasta (contrary to popular belief, I do eat food other than macaroni and cheese), I love to order their market plate with four different veggie sides or the lunchtime-only chicken reuben.
Many, many people swear by their version of mac. Their secret is the smoked gouda (which they also use on their excellent turkey burger, if you ask nicely) mixed into their bechamel. They also use spiral pasta, which is always one of my favorite shapes to eat and is fantastic for catching the sauce.
While I am a huge smoked cheese fan, I must confess that this isn’t my favorite mac in the city. The flavors are all there, but the sauce is a little too dry for my liking. I do appreciate the crispy bits of cheese on the top, though. That is never wrong.
